Prunes are European plums that have a high percentage of sugar and solids so that they cure (dry) to form firm, sweet, long-keeping prunes. The high sugar content assists in preserving the fruit. They are used for cooking without the need for much additional sugar and are also delightful eaten raw. Prune varieties also tend to hang firmly on the tree beyond the point of ripeness so that curing actually begins on the tree.
